Orzo Pasta and Bean Soup

Orzo pasta and bean soup – inspired by Italian cuisine, fresh and tasty, with orzo pasta, white beans and veggies.

This soup has everything you need, vegetables, protein, pasta, a mix of Italian spices and slightly soured with lemon juice.

If you're wondering where you can buy orzo pasta, I got them from Lidl, but you can also find them in Mega Image stores.

Cooking time: 30 minutes

 

Ingredients:

  • Sunflower oil

  • 1 onion

  • 1 medium leek

  • 2 carrots

  • 4 cloves of garlic

  • Pepper, salt - to taste

  • Rosemary, paprika, oregano - one teaspoon of each

  • Vegetable stock - 3.5 L

  • 4 potatoes

  • 2 cans of white beans

  • 150g of orzo pasta

  • The juice of half a lemon

  • Fresh parsley

Method:

  1. In a medium pot, saute the finely chopped onion for about 10 minutes on medium to low heat, until it becomes slightly translucent.

  2. Add the thinly sliced leeks and cook for another 3 minutes.

  3. Add the diced carrots, saute for another 5 minutes, then add the pressed garlic and spices. Mix all the ingredients well, pour in the vegetable soup and let it simmer.

  4. Peel the potatoes, cut them into medium cubes, and add them to the soup.

  5. When the potatoes are almost ready, add the boiled or canned beans, the orzo pasta and the lemon juice. Let it cook for about 8 minutes.

  6. The soup is ready when the orzo pasta is cooked. I served it with fresh parsley.
