My story

 

 

Hi,

My name is Nifanti Elena, I was born in a beautiful country, in Romania, and raised by two wonderful parents.

Because I spent all my childhood in the countryside, I was always close to nature. I enjoyed the seasonal vegetables and fruits from the garden and tasty food made by my mother.

For a long time, I had a chaotic and a not well-balanced lifestyle. Five years ago, I decided to try a vegan diet, out of pure curiosity. I wanted to eat lighter and healthier food, I just listened to what my body needed. The transition was natural and unrestricted, so as not to turn this whole experience into a burden. I allowed myself to cheat from time to time, if I felt like I had a craving for a schnitzel :)

Over time, I discovered a culinary world full of color, taste, and energy. The well-being of my body and mind convinced me that the chosen path was a beneficial one. I have energy, I enjoy delicious home-cooked meals, and most importantly, I have discovered that this diet is pure medicine.

Because such meals are harder to find in regular restaurants, I had to learn to cook almost every day at home. Since then, I have tested many recipes from different areas and cultures, with unusual ingredients and lots of fresh veggies. Over time I adapted these recipes according to my preferences and that's how many of my recipes appeared. That’s when Nifanti PlantBased blog was born.

As the recipes multiplied, I realized that this is what I like to do and I discovered my vocation. I ended up working in a vegetarian-vegan restaurant in Brașov, something that made me evolve and gain experience in the field alongside a team of beautiful people.

My desire is to inspire and help as many people as possible, towards a healthy lifestyle and to offer many tasty and nutritious recipes. This blog is a tool, a way to express myself through photography and interesting articles. I hope that all these meals end up on your tables and that you enjoy them as I do.

A choice that changed my life just out of simple curiosity, changing many perspectives I have over my life. Obviously, it didn't happen overnight, which proves that we need patience to step out of our comfort zone if we want to make major changes in our lives.

We see the world as we are on the inside, not as it is. So be curious, make mistakes, experience new things, and enjoy life.
