Baked sweet potato, broccoli and chickpea bowl
Once every two weeks I have to make a bowl of baked sweet potato, broccoli and chickpeas; they all go together perfectly, plus they are very tasty and full of vitamins. I always serve it with some homemade sauce, and this time I used sweet chilli jam.
What I really like about these kinds of bowls is that they can be prepared quickly. I just put all the veggies in the oven and in 30 minutes lunch or dinner is ready.

Cooking time: 35 minutes
ingredients:
2 sweet potatoes
1 medium broccoli
1 can of chickpeas
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oil
1 tablespoon sweet chilli jam
Method:
Preheat the oven to 180 degrees.
In the meantime, cut the vegetables - the sweet potato rounds and the broccoli into small pieces.
Drain the water from the chickpeas and add them to a bowl, then add the spices and a little oil and mix well.
Place parchment paper on a large baking sheet.
Put all the vegetables in the pan, the potato, broccoli, and chickpeas.
Drizzle a little seasoning and oil over the potatoes and broccoli.
Put the pan in the oven for 35 minutes. Turn them on the other side after 20 minutes.
I served this meal with a homemade sauce, sweet chilli jam.
