Bean stew with vegan sausage

Bean stew with vegan sausage - bean stew with Verdino sausage - breakfast, toast and homemade pickles.

This time I chose a much more practical and easy way to make this recipe. I used a canned product, any kind of canned beans with tomato sause will work, make sure it’s a vegan product.

I added just a few ingredients for extra flavor and taste, which you can find in the recipe below. You can replace the Verdino sausages with another type of sausage or smoked tofu cooked in a pan.

Ingredients:

  • 1 tablespoon of sunflower oil

  • 1 white onion

  • 1 carrot

  • 2 tablespoons tomato paste

  • 1 teaspoon sweet paprika

  • 1 tablespoon thyme

  • 1 bay leaf

  • 1/2 teaspoon pepper

  • 1/2 teaspoon chili flakes - optional

  • 4 cans of bean stew

  • 1 package of Verdino breakfast type sausages - 200g

Method:

  1. Finely chop the onion and sauté with a little oil in a medium saucepan over low heat. Sauté the onion until slightly translucent.

  2. Cut the carrot into small cubes and add it to the pot, cook it together with the onion for 10 minutes.

  3. Add all the spices and mix well for 30 seconds.

  4. Add the canned beans and let everything cook for 10 minutes.

  5. You can add a little hot water if you want the sauce to be more liquid.

  6. Meanwhile, put a little oil in a pan and cook the sausages over medium heat until they are roasted on all sides.

  7. I served the stew with toasted bread, homemade pickles and chopped parsley.
