Beet borscht

A brightly colored borscht, rich in vitamins and minerals, beetroot being considered one of the healthiest vegetables.
Portions: 4 liters

Ingredients:
3 tablespoons of oil
3 onions
1 carrot
1 red pepper
5 medium beets
4 potatoes
200 ml homemade borscht
3 tablespoons of wine vinegar
Salt, pepper to taste

Method:
Finely chop the onions, carrots, and red peppers.
Peal the beets and potatoes and cut them into cubes.
In a larger pot, saute the onion with a little oil for about 5 minutes, then add the carrots and peppers and saute them for another 10 minutes.
Add about 3.5 L of water to the pot, then add the potatoes and beets. Let them boil until the beets and potatoes are well cooked.
Towards the end, add the borscht, vinegar, salt and pepper and let it boil for about 5 minutes.
I served it with finely chopped fresh pine nuts.
