Ingredients:

200g crispy tofu - recipe on the blog

2 medium sweet potatoes

half a broccoli

2 kapia peppers

2 handfuls of frozen edamame (150g)

1 avocado

sesame seeds

sweet chili sauce

salt, pepper, paprika

Method:

  1. You can find the recipe for crispy tofu on the website. It goes perfectly in this bowl.

  2. Start by preheating the oven to 180 degrees Celsius and lining a baking tray with parchment paper. Slice the sweet potatoes into rounds and the peppers into strips, then put them on the tray and sprinkle with salt, pepper, and paprika. Place the tray in the oven for 40 minutes, flipping the vegetables halfway through.

  3. Meanwhile, bring a pot of water with a pinch of salt to a boil. Cut the broccoli into florets and cook them in the boiling water for about 10 minutes or until tender. Once cooked, remove the broccoli and transfer it to a bowl of cold water to stop the cooking process.

  4. After the 40 minutes, take the baking tray out of the oven and set it aside.

  5. Place the edamame in a microwave-safe bowl, cover it with plastic wrap, and microwave on high for 5 minutes at 500 W. Alternatively, you can boil them for 8 minutes in a small pot.

  6. Now you can assemble everything in a bowl, adding the cooked vegetables, crispy tofu, avocado, sesame seeds, and sweet chili sauce as a final touch.
