ZUCCHINI FRITTERS WITH GARLIC SAUCE

Zucchini fritters with garlic sauce - I love this recipe! I believe anyone who has tasted something like this knows what I'm talking about. Once in a while, I like to indulge my taste buds with something fried, even though it's not as healthy. But I had these zucchinis available and I was craving zucchini fritters with garlic sauce.

The composition for the zucchinis is very simple, it consists of flour, salt, and oil, followed by coating them in breadcrumbs. I chose to serve them alongside oven-baked sweet and white potatoes with spices, garlic sauce, and fresh vegetables.

Ingredients:

  • 2 zucchinis

  • 3 white potatoes

  • 1 sweet potato

  • 1 head of garlic

  • 1 cup of flour

  • 2 cups of water

  • 1 pinch of salt

  • 2 cups of breadcrumbs

  • Oil

  • Salt, pepper, paprika

  • Vinegar or lemon juice

Method:

  1. I cooked the potatoes in the oven to make them healthier. Preheat the oven while you peel them. Cut them like you would for french fries and add oil, salt, pepper, and paprika. Place them on a baking tray lined with parchment paper and bake them in the oven at 200 degrees Celsius (390 degrees Fahrenheit) for 40 minutes, flipping them halfway through.

  2. Meanwhile, prepare the garlic sauce. Peel and crush the garlic cloves with a garlic press, adding salt in a mortar. Crush the garlic while gradually adding oil (about 2 tablespoons) and lemon juice or vinegar (1 teaspoon), stirring well for about 10 minutes until you get a creamy consistency.

  3. Wash the zucchinis, slice them into rounds, and prepare the batter. Mix the flour, water, oil (about 1 teaspoon), and salt until well combined.

  4. Place breadcrumbs in a bowl and prepare a few zucchinis for frying. Dip each zucchini round into the batter, then coat it with breadcrumbs, and fry them in a pan with hot oil until they turn golden brown on both sides.

  5. Enjoy the delicious taste of oven-baked potatoes and fried zucchinis with the garlic sauce.
