Crispy tofu sandwich

I can't say I'm a big fan of tofu, especially when it's served plain in salads or in other ways. But when I saw the crispy, oven-baked version, which also means it's healthier, I had to give it a try. After several attempts, I found the perfect combination is this crispy tofu sandwich.

Is tofu healthy?

Not only is tofu an excellent source of protein, but it also contains high levels of calcium, selenium, manganese, iron, and magnesium. Unlike other animal protein sources, tofu is low in saturated fats and is a good source of unsaturated fats. It is also an excellent low-carb protein source for vegetarians or vegans.

Ingredients:

For the tofu:

  • 200g tofu (I used the one from Inedit in brine)

  • 4 tablespoons breadcrumbs

  • 4 tablespoons nutritional yeast

  • 2 tablespoons crushed corn flakes

  • 1 teaspoon paprika, both sweet and spicy, garlic powder

  • 6 tablespoons chickpea flour

  • 6 tablespoons water

  • a dash of apple cider vinegar

For the sandwich:

  • 2 small baguettes or one large baguette

  • tomatoes

  • pickled or fresh cucumbers

  • roasted peppers

  • lettuce or spinach

  • onions

  • broccoli sprouts

  • sweet chili sauce

Method:

  1. Preheat the oven to 200 degrees Celsius and line a baking tray with parchment paper.

  2. In a medium bowl, prepare the dry mixture by combining the breadcrumbs, nutritional yeast, crushed corn flakes, and spices.

  3. In another bowl, mix together the chickpea flour, water, and apple cider vinegar.

  4. Cut the tofu into approximately half-centimeter thick pieces. Dip each piece into the wet mixture and then coat it with the dry mixture. Place the coated tofu pieces on the baking tray.

  5. Bake the tofu in the oven for 20 minutes, then flip the pieces over and bake for an additional 10 minutes.

  6. Once the tofu is ready, you can assemble the sandwiches.

  7. Slice the vegetables according to your preferences.
