Fried rice with tofu and veggies

Fried rice with tofu and veggies - the recipe is perfect for days without inspiration, especially if you have leftover cooked rice from the refrigerator and other fresh or frozen vegetables. I used brown rice, mexican vegetables, broccoli, tofu in brine and soy sauce, it was simply delicious.

Cooking time: 15 minutes

 

Ingredients:

  • 3 cloves of garlic

  • 1 cup frozen mexican mix veggies

  • 2 cups fresh or frozen broccoli

  • 1 block of tofu (about 300g)

  • 2 cups cooked rice

  • 4 tablespoons of soy sauce

  • 1/4 teaspoon pepper

  • 2 green onions

  • 1 teaspoon sesame seeds

Method:

  1. In a wok with a little oil, saute the chopped garlic, frozen veggies and broccoli for 5 minutes on medium heat.

  2. Then cook the diced tofu for 3 minutes in a pan with a little oil, until it’s crispy on all sides.

  3. Add the cooked rice and tofu to the wok, then the soy sauce, and mix well. Cook it for one more minute.

  4. An important tip - don’t add salt to the dish, the soy sauce is quite salty and if you also use the tofu version in brine, it can be too salty in the end.

  5. I served it with green onions and sesame seeds.
