Fried rice with tofu, edamame and veggies

Fried brown rice with tofu, edamame and vegetables - brown rice with scrambled tofu, mixed veggies, edamame, soy sauce and green onions.

Ingredients:

  • 300 g cooked brown rice

  • 170 g of tofu

  • 2 tablespoons of sesame oil

  • 1/2 teaspoon paprika

  • 1/2 teaspoon turmeric

  • 1/2 teaspoon ground coriander

  • 1/4 teaspoon pepper

  • 1 tablespoon of sunflower oil

  • 1 medium white onion

  • 1/2 teaspoon paprika

  • 1/4 teaspoon pepper

  • 1 tablespoon soy sauce

  • 250 g frozen mixed Mexican vegetables

  • 50 g frozen edamame

  • Green onion

  • Sesame seeds

Method:

  1. Start by cooking the brown rice according to package directions. After it's cooked, set aside.

  2. Meanwhile, crumble the tofu by hand in a bowl, add a little oil to a pan and cook until lightly browned. Put the spices on top - paprika, turmeric, coriander, pepper, mix well and cook it for another 2 minutes. Add the soy sauce, mix well for 1 minute and it's ready. Remove the tofu from the pan and set aside.

  3. Because I used frozen edamame pods, I had to boil them separately before adding them to the dish. Boil them for about 8 minutes in salted water, cool them under a stream of cold water, then remove the beans from the pods in a separate bowl.

  4. Finely chop the onion, add oil to the pan and fry it over medium heat until it becomes slightly translucent. Add the frozen vegetables to the pan and cook them for about 7 minutes, add the spices and cook for another 5 minutes. Add the rest of the ingredients, cooked tofu, brown rice and edamame. Add a little sesame oil, mix well and let it cook for another 3 minutes.

  5. At the end add the soy sauce, mix well for 1 minute and it's ready.

  6. I served it with chopped green onions and sesame seeds.
