Gyros with caramelized mushrooms, potatoes and tzatziki

Gyros with caramelized mushrooms, potatoes and tzatziki - a simple mix of ingredients but very tasty, all the flavors come together so well.

Pan-fried mushrooms, baked potatoes, fresh vegetables, olives and tzatziki sauce all combine to create an explosion of wonderful textures and flavors.

Ingredients for gyros:

  • 10 brown mushrooms

  • 1 teaspoon soy sauce

  • 4 large potatoes

  • Salt pepper

  • 1 avocado

  • 50 g cherry tomatoes

  • 50 g kalamata olives

  • 2 tortillas

Ingredients for tzatziki sauce:

  • 2 medium cucumbers

  • 4 tablespoons yogurt (I used soy yogurt)

  • 4 cloves of garlic

  • 1 teaspoon lemon juice

  • 1/2 bunch of dill

  • 1/4 teaspoon salt

  • 1/2 teaspoon olive oil

Method:

  1. I cooked the potatoes in the oven for a healthier version. Until you peal the potatoes, you can preheat the oven to 180 degrees.

  2. Cut them as for fried potatoes; add a little oil, salt, pepper, and place them on a tray and bake them for 40 minutes. During baking, after 20 minutes you can give them a shake.

  3. For the tzatziki sauce, peel the garlic, crush it with a garlic press, and add some salt and put it in a small bowl. Grate the cucumbers through a large grater, put a little salt on top. Squeeze the juice well and place the cucumbers in a bowl. Finely chop the dill, add the rest of the ingredients over the cucumber, mix well, and set the sauce aside.

  4. Cut the mushrooms into slices, put a little oil in a pan, and fry them until the water evaporates. At the end, add a teaspoon of soy sauce and caramelize for about 30 seconds.

  5. Cut the remaining vegetables into rounds or slices - olives, avocados and cherry tomatoes.

  6. Heat the tortilla in a pan. Start with a layer of sauce, mushrooms, potatoes, avocado, tomatoes, olives, and a little more sauce on top.

  7. Roll and it's ready to serve.
