Kale and Potato Salad with Tahini Dressing

Kale and potato salad with tahini dressing - one of the most delicious potato salads I've ever tried.

Fresh but also hearty, with roasted potatoes, kale and red onion, served with tahini and dijon mustard dressing.

Ingredients for baked potatoes:

  • Olive oil

  • Salt, pepper - to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon sweet paprika

  • 1 teaspoon oregano

Ingredients for the dressing:

  • 3 tablespoons tahini

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon dijon mustard

  • 1 teaspoon lemon juice

  • Half a teaspoon of oregano

  • Half a teaspoon of garlic powder

  • Pepper

  • Water - until you reach the desired consistency

Ingredients for the salad:

  • 5 handfuls of shredded kale

  • Lemon juice

  • Half a red onion

Method:

  1. Preheat the oven to 180 degrees.

  2. To begin with, peel the potatoes and randomly cut them into medium pieces.

  3. Put them in a bowl and add oil, all the spices and mix well.

  4. Place them on an oven tray and leave them to bake for 30-35 minutes. Do not forget to flip the potatoes after 20 minutes.

  5. While the potatoes are baking, prepare the sauce. Mix all the ingredients in a small bowl and set aside.

  6. Massage the kale well some lemon juice and let it soften until the potatoes are ready.

  7. Take the potatoes out of the oven, let them cool a little and add them to the salad.

  8. At the end pour in the dressing and mix well.

  9. Enjoy!
