Noodles with Caramelized Mushrooms
Noodles with caramelized mushrooms - delicious and slightly spicy, perfect for a quick and healthy dinner. Rice noodles with caramelized mushrooms in soy sauce and ginger, served with a sweet, sour and slightly spicy sauce, topped with sesame seeds and green onions.

Ingredients for the sauce:
100 ml soy sauce
25 g of honey
1 tablespoon balsamic vinegar
1 tablespoon of rice vinegar
1 and 1/2 tablespoons tahini or peanut butter
1/2 tablespoon molasses
Half a teaspoon of powdered ginger
2 crushed garlic cloves
20 ml of water
1 spoon sweet chilli - optional
Ingredients for the dish:
150 g of rice noodles
1 tablespoon sesame oil or olive oil
1 small yellow onion
250 g of mushrooms
Pepper
Half a teaspoon of thyme
1 tablespoon sesame seeds
3 green onions chopped round or diamond
Method:
Mix all the ingredients for the sauce - soy sauce, honey, balsamic vinegar, rice vinegar, tahini or peanut butter, molasses, water, ginger, garlic and sweet chili. Put it aside.
Cook the noodles according to the instructions on the package, cool them under a stream of cold water, and set them aside.
In the meantime, cut the mushrooms in half, then into thin slices.
Finely chop the onion, add it to a pan with a little sesame or olive oil, and saute until soft and translucent. Add the mushrooms and mix well. After the water from the mushrooms has reduced, add the spices - pepper, thyme and ginger and cook them for another 3 minutes. At the end, add soy sauce and sautee everything for 2 minutes. Put the mushrooms aside and prepare the sauce.
In the same pan, add the sauce and cook it on medium to low heat; when it boils, add the noodles and mix all the ingredients very well. Then remove the pan from the heat.
Place the noodles on the plates and on top add the caramelized mushrooms, sesame seeds and green onions.
