Stuffed Sweet Potato

Stuffed sweet potato - sweet potato stuffed with white beans, homemade chili jam, avocado, green onions and sprouts.

Ingredients:

  • 3 larger sweet potatoes

  • 1 can of white beans

  • 2 pieces of avocado

  • Lemon juice

  • Hot pepper jam or sweet chili

  • 2 spring onions

  • Leek sprouts

  • Salt, pepper

  • Olive oil

Method:

  1. Preheat the oven to 180 degrees.

  2. Meanwhile, poke the potatoes with a fork in several places, place them on an oven tray, sprinkle them with a little olive oil and salt. Let them bake for 40 minutes or until they are very soft. This can vary depending on the variety of the potato, so you can check it with a fork after 35 minutes.

  3. When the potatoes are ready, let them cool a bit, meanwhile mash the avocado with a fork with a little salt, pepper and lemon juice, and chop the spring onions.

  4. Cut the potato lengthwise but not completely, mash the core with a fork and make room for the filling. Add a layer of white beans, hot pepper jam, avocado paste, green onions and sprouts.

  5. Serve this meal with red cabbage salad, or you can opt for any sides you want.
