Sweet Potato and Streusel Cake
Sweet potato and streusel cake - sweet potato bread or cake with sweet potato, a delicious dessert with streusel topping.
It resembles pumpkin bread or pumpkin cake and is just as delicious, especially with the crunchy topping that gives it a more special taste and appearance.
What is streusel?
It is a crumbly mixture generally made of flour, butter and sugar, which can be spread over cakes, cookies, pies and muffins. It is very easy to make and can change any mundane dessert into something more spectacular.

Ingredients for the streusel:
80 g of flour
50 g molasses
1 teaspoon cinnamon
55 g cold coconut oil or butter
40 g chopped walnuts
Ingredients for the cake:
200 g of flour
Half a spoonful of baking powder
Half a teaspoon of baking soda
1 teaspoon cinnamon
1 teaspoon ground dry ginger
A quarter of a teaspoon of nutmeg
A pinch of salt
230 g of mashed sweet potato
80 ml sunflower oil
120 ml vegetable milk
1 teaspoon apple cider vinegar or classic vinegar
160 g brown sugar
Method:
Preheat the oven to 180 degrees. And place a baking paper on a cake tray.
First prepare the sweet potatoes, for this recipe. I used about 2 medium potatoes; poke them lightly with a fork, and bake them in the oven for 40 minutes. When the potatoes are ready, leave them to cool a little, then peel and mash them with a fork or a potato masher.
To make the streusel, in a small bowl mix the flour, cinnamon and molasses, add the coconut oil and crumble it with your fingers until it forms small lumps. Add then chopped nuts and put the mix in the fridge.
For the cake, mix the flour, baking powder, baking soda, spices, and salt in a bowl.
In a large bowl, whisk the milk, oil, sweet potato puree, vinegar, and sugar.
Slowly add the dry mixture over the liquid one and mix until all the ingredients are incorporated.
Place the composition in the cake tray and level it well.
Sprinkle a good amount of the streusel on top and press it gently into the composition, but don’t press to hard.
Bake the cake in the oven for 60-80 minutes, it must be checked with a toothpick or a knife, if it comes out clean, it means it’s ready.
