Roasted new potatoes with veggies

New potatoes in a pan with veggies- simply delicious!

I love spring, it represents new beginnings, a new year, everything is reborn and fresh, it gives me a feeling of joy and gives me energy. This season offers me motivation, inspiration and I feel something is reborn in me.

But most importantly, I always look forward to the fresh and flavorful vegetables from the markets. The joy that you can finally buy local fresh vegetables, organic and the fact that I am supporting their small businesses.

The moment I noticed that new potatoes are available in the markets, they inspired me to cook this recipe. The whole house gathered in the kitchen to see what was happening, it smelled so good.

Ingredients:

  • 1 kg new potatoes

  • 2 bell peppers

  • 2 red onions

  • 3 cloves of garlic

  • parsley

  • 3 green onions

  • salt, pepper

  • sweet paprika

Method:

  1. Wash and boil the potatoes with the skin until they become soft. When they are ready, rinse them under cold water and set them aside.

  2. In a larger frying pan or wok with a little oil, add all the chopped vegetables except for the green onions and parsley. Cut the potatoes into halves or quarters and add them to the pan.

  3. Sauté well until all the vegetables are roasted, about 20 minutes on medium heat. Then add the seasoning, green onions, and parsley.

  4. Enjoy!
