Green lentil soup

A very simple and tasty recipe, with fresh vegetables and green lentils. I usually make this recipe with white beans, but this time I decided to try it with green lentils. It went very well with fresh lovage, toasted bread, and hot pepper.

What I love about this soup is that it is very filling and packed with vitamins.


Portions: 2 Liters

Preparation time: 10 minutes

Cooking time: 40 minutes

 

Ingredients:

  • 200g green lentils

  • 3 onions

  • 3 carrots

  • 1 pepper

  • 2 tablespoons of oil

  • 1 and 1/2 tbsp tomato paste

  • 2 tablespoons of salt

  • Fresh parsley or lovage

Method:

  1. Rinse the lentils under cold water and set aside.

  2. Chop the onions, carrots and pepper into small pieces and add them in a pot of water over a medium heat.

  3. Add the green lentils and cook for 35 minutes, until the lentils and vegetables are soft and cooked through.

  4. When it is almost ready, after 30 minutes, saute the oil with the homemade tomato paste. Add it to the soup and let it boil for another 5 minutes on low heat.

  5. Before turning off the heat, add the finely chopped parsley or lovage to the soup and mix well. But keep some aside.

  6. Let the soup rest for a few minutes before serving.

  7. I served it with fresh parsley, toasted bread and hot peppers.
