Roasted cauliflower with hummus and crispy chickpeas

I personally could eat cauliflower in every possible way. Raw, baked, in cream soup, in salads or pickled. Either way, it's one of the most tastiest and healthiest vegetables.

This time I cooked the cauliflower in the oven, it just simply melts in your mouth. I served it with a homemade hummus, you can find the hummus recipe on the blog, link here.

I cooked the chickpeas in a pan with a little oil and a mix of spices, it changes the taste completely. You can add it to salads, bowls or have it as a snack.

Cooking time: 40 minutes

 

Ingredients:

  • 1 medium cauliflower

  • 500 g homemade hummus

  • 1 can of chickpeas

  • Olive oil

  • Salt, pepper

  • Sweet paprika

  • Turmeric

  • Garlic powder

Method:

  1. Preheat the oven to 180 degrees.

  2. Cut the cauliflower into florets or round slices and place it on a baking tray. Brush the cauliflower with olive oil and the spices - salt, pepper, paprika and turmeric. Bake the cauliflower for about 30 minutes, or until the edges are roasted.

  3. Until then, you can prepare the hummus, if you don't already have one, you can find the recipe here.

  4. For the chickpeas, add some olive oil in a pan, drain the chickpeas, rinse them, and cook them for about 1 minute. Then you add the spices salt, paprika, garlic, and turmeric. Stir from time to time, until it has golden color and forms a crispy crust.

  5. Place a bed of hummus on the plate, put the cauliflower on top, and finally a few spoonfuls of chickpeas.
